iCombi Pro
The iCombi Pro line adds assisted cooking to the combi format, so the oven reads what is loaded and manages heat, humidity and airflow through the cook rather than leaving every adjustment to the operator. That consistency counts most where the same dish is produced shift after shift.
Weigh tray capacity, the utilities the room can supply, and whether a tabletop or floor model fits the line you already run.

Rational iCombi Pro
About the RATIONAL iCombi Pro
The iCombi Pro is RATIONAL’s top-tier commercial combi oven, built for kitchens that want the unit itself to manage variables a cook would otherwise have to judge by eye. Instead of manual dials, it runs on a 10.1-inch touchscreen and a set of automated systems that adjust cooking in real time based on load size, starting temperature and food type.
That automation comes from four built-in assistants working together. iCookingSuite selects the right cooking path for the food in the chamber and adjusts temperature as the cook progresses. iDensityControl manages humidity and airflow to keep results consistent whether the oven is half full or fully loaded. iProductionManager sequences mixed loads so different items finish at the right time. iCareSystem monitors soil levels inside the chamber and recommends the right cleaning cycle rather than running a fixed program regardless of need.
Like the iCombi Classic, the Pro covers steam, convection and combination cooking in one chamber, with a temperature range of roughly 30°C to 300°C (85°F to 572°F). It is available in electric and gas versions, in 6, 10 and 20 pan configurations, in GN 1/1 and GN 2/1 tray sizes, so the step up from Classic to Pro is in automation and control, not in the oven’s underlying cooking capability.
Key Features

- iCookingSuiteDetects product-specific requirements and load size, then adjusts cooking automatically to deliver consistent results without the operator tracking every variable manually.
- iDensityControlManages the cooking chamber’s humidity and airflow to maintain consistent climate conditions regardless of how full the oven is.
- iProductionManagerOrganizes and sequences mixed loads, so multiple dishes with different cook times can run in the same chamber and finish correctly.
- iCareSystemIdentifies the actual level of cleaning and descaling needed and recommends the right cycle, including a short interim clean for light soil, rather than a single fixed cleaning program.
- 10.1-inch touchscreenReplaces manual dials with a visual interface, including a customizable display for frequently used functions.
- Program storageDepending on the model, the iCombi Pro stores several hundred to over a thousand recipe programs, supporting kitchens that run a large or frequently changing menu.
- Core temperature probe and hand showerA multi-point core temperature probe supports precise doneness for proteins, and a retractable hand shower is built in for manual rinsing and cleaning tasks.
- Wi-Fi and Ethernet connectivityStandard connectivity integrates with RATIONAL’s ConnectedCooking platform, allowing kitchens to monitor and manage ovens remotely.
One chamber, several dishes at once
iProductionManager sequences a mixed load so items with different cook times finish when they are meant to, instead of the line working around whatever went in first.
iDensityControl holds the climate steady while that happens, so a half load and a full load come out the same. The core temperature probe reads doneness at several points through the product rather than one.
iCombi Pro Configurations
As with any combi oven, the right capacity depends on how many pans you need running at once during your busiest service, not an average shift.
| Model type | Pan capacity | Fuel options | Typically suited to |
|---|---|---|---|
| 6-pan (half size) | 6 half-size sheet pans | Electric | Smaller kitchens with lighter batch needs |
| 6-pan (full size, 1/1 GN) | 6 x GN 1/1 | Electric or gas | Restaurants and mid-volume kitchens |
| 10-pan (1/1 GN) | 10 x GN 1/1 | Electric or gas | Mid-to-high volume kitchens with mixed menus |
| 20-pan (1/1 GN) | 20 x GN 1/1 | Electric or gas | High-volume kitchens, hotels, banquet and catering production |
| 20-pan (2/1 GN) | 20 x GN 2/1 | Electric | High-output kitchens needing maximum tray capacity |
Why Choose the iCombi Pro
The iCombi Pro suits kitchens where load size and food type vary from one cook to the next and staff experience varies by shift. Because iCookingSuite and iDensityControl adjust automatically, results stay consistent even when the person operating the oven changes or the batch size is not the same every time.
It is a step up in cost from the iCombi Classic, and that cost reflects the automation, not a difference in build quality or core cooking capability. Kitchens running a stable, repeatable menu with a consistently trained team often get full value from the Classic. Kitchens with higher volume, more menu variation, or less consistent staffing tend to get more use out of what the Pro automates.
You can see an iCombi running in our culinary test kitchen in Richmond before you decide: 2560 Shell Road, Unit 3033, open Monday to Sunday, 12:00 to 6:00 PM.
Before you choose a configuration

Confirm your kitchen’s available electrical supply or gas connection, water supply and drainage, and required ventilation, since these vary by model and fuel type. Contact A3 Equipment with your menu, expected volume and available utilities, and our team can help you find the right iCombi Pro configuration for your kitchen.
RATIONAL iCombi Pro FAQs
What is the RATIONAL iCombi Pro?
The iCombi Pro is RATIONAL’s top-tier commercial combi oven, combining steam, convection and combination cooking with automated systems that adjust temperature, humidity and cleaning cycles based on the load in the chamber.
What does iCookingSuite do?
iCookingSuite detects the type and amount of food loaded into the oven and automatically adjusts the cooking path and temperature to deliver consistent results, reducing the need for the operator to judge timing and settings manually.
What’s the difference between the iCombi Pro and the iCombi Classic?
The iCombi Pro adds a touchscreen interface and four automated systems (iCookingSuite, iDensityControl, iProductionManager and iCareSystem) that adjust cooking in real time. The iCombi Classic uses manual dial controls with programmable recipe storage. Both offer the same cooking modes and tray configurations.
What pan capacities are available?
The iCombi Pro is available in 6, 10 and 20 pan configurations, in GN 1/1, GN 2/1 and half-size tray options, covering kitchens from smaller operations up to high-volume production.
Is the iCombi Pro available in gas and electric?
Yes. Depending on the specific model and pan capacity, both electric and gas (natural gas or propane) versions are available.
Does the iCombi Pro clean itself?
It includes an automated cleaning system, iCareSystem, which detects how much soil is in the chamber and recommends the appropriate cleaning cycle, including a short interim clean for light use between full cleans.
Can the iCombi Pro be monitored remotely?
Yes. It includes built-in Wi-Fi and Ethernet connectivity and integrates with RATIONAL’s ConnectedCooking platform, which allows kitchens to monitor and manage the oven from a computer, tablet or smartphone.
What does the iCombi Pro need for installation?
Typically the correct electrical connection or gas line, a water supply for steam generation, drainage and ventilation that meets local code. Requirements vary by model and capacity, so confirm specifications for your chosen unit before ordering.
