Holding & Warming
Commercial Holding and Warming Equipment for Canadian Kitchens
Holding and warming equipment keeps food that is already cooked at a safe serving temperature between the kitchen and the customer. None of it cooks. Every unit on this page exists to protect quality and food safety through a service, whether that service is a buffet line, a deli counter or a breakfast rush.
Restaurants, buffets, cafeterias, delis, grocery and convenience stores, hotels, caterers, schools and hospitals all need somewhere for cooked food to wait. The gap between the oven and the plate is where quality is usually lost, and holding equipment is what closes it.
A3 Equipment carries holding and warming equipment for kitchens and serving counters across Canada. This page explains what each type is for and how to pick between them, then sends you through to the category that matches how you serve.
What Counts as Holding and Warming Equipment?
Holding equipment keeps cooked food at a safe serving temperature for a set period. It is not cooking equipment, and it is not reheating equipment. Food should be fully cooked and already hot before it goes in, and it should come out within the window your menu and your local health authority allow.
Open service or closed display
Open units, such as hot food tables and soup kettles, suit a line where staff or guests serve from pans. Closed glass units, such as heated display cases and pizza warmers, suit a retail counter where the food has to be seen and protected at the same time.
Wet heat or dry heat
Moist foods, such as sauces, rice, soups and vegetables, hold better with water or humidity in the system. Crisp foods, such as fried items, pastry and pizza, hold better with dry heat. Mixed menus either need two units or one with separate zones.
Single product or general purpose
Some units are built around one product, because the product demands it: a soup kettle holds liquid, a rice warmer holds rice, a pizza warmer holds boxed and sliced pizza. A hot food table or a heated display case takes almost anything in a pan.

Eight categories, each with its own guide to sizing, power and installation. Every unit we list is on this page as well, so you can also work straight from the grid above.
Which Holding Unit Fits Your Service?
Start from how the food reaches the customer, not from the equipment list. The service style usually decides the category, and the volume decides the size.
| How you serve | Start with | Why |
|---|---|---|
| Buffet, cafeteria or catering line | Hot food tables | Open wells take standard pans, so mains, sides and sauces sit side by side |
| Retail or deli counter | Heated display cases | Glass and lighting sell the product while the heat holds it |
| One liquid product all day | Soup kettles | A lid, a ladle and a thermostat, on a counter, with no plumbing |
| Pizza by the slice or the box | Pizza warmers | Shelves and heat built around pizza, so the crust survives the hold |
| Rice with every plate | Rice cookers and warmers | Consistent batches off the range, held at serving temperature |
| Breakfast toast at volume | Conveyor toasters | Same colour slice after slice without staff watching a timer |
| Cooking ahead for a banquet | Food holding cabinets | Insulated cabinets hold full pans away from the counter for hours |
| General hot holding | Food warmers | Countertop and floor units for the gap between kitchen and counter |
What to Check Before You Order
- Peak volume, not the averageSize every holding unit to your busiest service window. A table or case that is right on a quiet Tuesday will fail on a Friday night.
- Power at the stationCheck voltage, wattage, amperage and plug type against what is actually at the serving point. Larger tables and cases often need 208V or 240V, and some are voltage-specific.
- Fuel, where it appliesHot food tables are listed in electric, natural gas and propane. Gas units need a correct connection and, in most cases, a licensed installer.
- Wet or dryDecide before you compare models, because it changes the daily routine: filling and draining water, or a simple wipe-down.
- Footprint and the path inMeasure the counter or floor space and the route the unit has to travel, including doorways. Allow clearance at the front and back where staff load and serve.
- Food safetyHold at 60°C (140°F) or above, check with a thermometer and follow your local public health rules for hot-holding, recording and self-serve protection.
- CleaningRemovable inserts, shelves, crumb trays and drain taps decide how long the close-down takes every night.
Not sure which category you need? Send A3 Equipment your menu, your peak volume and the power you have at the serving point, and our team can point you to the right units.

Holding and Warming FAQs
What is holding and warming equipment?
Holding and warming equipment keeps cooked food at a safe serving temperature until it is served. It covers hot food tables, heated display cases, food warmers, soup kettles, pizza warmers, rice warmers and conveyor toasters. None of it is designed to cook food from raw.
Can holding equipment reheat cold food?
No. Holding units are built to keep hot food hot. Cook or reheat food to the required temperature in cooking equipment first, then move it into the holding unit.
What temperature should hot food be held at?
At or above 60°C (140°F). Check with a thermometer and follow your local public health authority for how often to check and record temperatures.
What is the difference between a hot food table and a heated display case?
A hot food table has open heated wells and suits a buffet or cafeteria line. A heated display case is a glass-fronted cabinet that holds and merchandises food at a retail counter. Choose by how the customer is served.
Should I choose wet or dry heat?
Wet heat suits sauces, soups, rice and vegetables, which dry out under direct heat. Dry heat suits fried, breaded and baked items, which go soft in moisture. A mixed menu needs either two units or one with separate zones.
Do I need gas or electric?
Most holding equipment is electric and plugs in. Hot food tables are also listed in natural gas and propane. Your available supply at the serving point usually decides it, so check voltage and plug type, or the gas connection, before ordering.
How long can food stay in a holding unit?
It depends on the food, the unit and the settings. Test your own products to set a quality window, and follow local food safety rules for maximum hot-holding times.
